If you follow us on Instagram, you might have noticed that my sister is in town! She got here a couple of weeks ago and I feel like with her here, the holidays have really arrived! Growing up in our home, the holidays were kind of like a few of the big Christmas classics you’ve seen. Magical, loud, lots of people, relaxing for everyone but the moms, and at times when we were singing carols or performing the Nativity, peaceful.

There are 9 kids in our family + spouses + grandchildren and I’m sure it felt like she was feeding a small army. We made a lot of cookies, cakes, rice krispie treats, ice cream sundaes, brownies, and gingerbread houses. The kids always got to help & being around family was the best. While we enjoyed our holiday treats, we’d be watching Christmas Vacation, Santa Claus, A Christmas Story, or Elf in the background.
Besides making heaps and heaps of holiday treats for our family, my mom has been amazing at delivering treats to other people. Her legacy of treats has set the bar pretty dang high.

Carmelitas Holiday Treats

46 light carmels
4 T milk, light cream or evaporated milk {I’ve always used milk}
1 cup flour
1 cup quick oats
3/4 cup brown sugar
1/2 t baking soda
1/4 t salt
1/2 cup melted butter
1 cup chocolate chips {Guittard are amazing, the bigger chocolate chip for me the better}

1/2 cup chopped pecans {I use about 1/4 cup Heath Toffee Bits}

Preheat your oven to 350.
Melt carmels with milk in microwave stirring every minute until melted. Set them aside.
Combine all dry ingredients except chocolate chips and pecans {toffee bits}. Stir in melted butter until mixed. Press half of crumbs into 7 x 11 pan.
Bake for 10 minutes.
**Here’s where I switch it up a bit. Since they have been such a crowd pleaser, I make a 9 x 13 and just add a touch more to every ingredient. I use about 3/4 crumbs for the bottom.**
Remove from oven, sprinkle chocolate chips & pecans or toffee bits. I like there to be a full layer of chocolate chips. I usually can barely see any crust, if that’s more than a cup, that’s ok.
Slowly pour carmel evenly over the top.

Chocolate, carmel, toffee…it’s pretty much the best combo!
Sprinkle remaining crumbs on top and bake for 15-20 minutes longer.
Let it sit for a bit to cool down and then you won’t have chocolate and caramel drizzling everywhere.

Holiday Treats – Chocolate Chip Cookies

1 lb butter {4 sticks}
1 1/2 cup sugar
2 cups brown sugar
1 TBSP vanilla
3 eggs
Combine these ingredients together first and then sift in:
1 1/2 tsp baking soda
1 1/2 tsp salt
5 1/2-6 cups flour
Super easy!
Then mix in 1 1/2-2 bags of Guittard Chocolate Chips.
Bake @375 for 8-10 minutes on an ungreased cookie sheet.
