I snagged this recipe from Mrs. M and it really does disappear so try it while it’s still grilling season!
Disappearing Pork Tenderloin with pico de gallo
{adapted from Weber’s Big Book of Grilling}
For the marinade you’ll need:
1/3 cup fresh orange juice
2 T extra virgin olive oil {I’ve used regular and extra}
2 T Worcestershire sauce
1 T molasses
1 T minced garlic
2 pork tenderloins, about 1 pound each
Whisk together the marinade ingredients. Trim any excess fat and silver skin from the tenderloins. Place the tenderloins in a large resealable plastic bag and add the marinade. Press air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl and refrigerate for 1-2 hours, turning occasionally.
For the rub:
2 t. chili powder
1 t. cracked black pepper
1 t. kosher salt
1/2 t. ground cumin
1/2 t. dried oregano
1/4 t. granulated garlic {I used minced}
Combine rub ingredients in a small bowl.
Remove the pork from the bag, and discard the marinade. Coat evenly with the rub and lightly brush or spray with olive oil. If you plan ahead of time, let it sit at room temp for 20-30 minutes before grilling. Grill over indirect medium heat until the centers are barely pink and the internal temperature reaches 155, about 20-30 minutes, turning once halfway through grilling time. Remove from the grill, loosely cover with foil and allow to rest for 3-5 minute. {I usually skip that step} Serve with salsa or pico de gallo and we use rice.
It is so delicious! My dad describes it as being very light and fresh!
