Mexican Haystacks are a favorite in our home. Mainly because you can add what you’d like and so the pickiest of our kids might end up with 1 or 2 things on their rice while us grown ups can enjoy all the colors and tastes!
You need:
1 lb. ground turkey
1/4 cup onion
rice
salsa
red bell pepper
corn
avocado
cilantro
shredded cheese
tortilla strips
The tomatoes came from our garden & they are so good! My husband & I have been trying to find more recipes with tomato because there are so many still growing.
Combine your meat and 1/4 cup onion and cook until meat is browned. Drain meat and add salsa. Let simmer for 15-20 minutes.
Toss the rice in the rice cooker.
While the rice is cooking and the meat is simmering, chop up whatever toppings you’d like.
These are our favorite, but I’m sure there are more possibilities.
Usually with our meals I will make beans or some other side dish, but with this I feel like you get everything. It is a filling meal, but tastes fresh and light.

Prep time: 15 mins
- rice
- 1/4 Cup onion (optional)
- 1 lb. ground turkey
- 1 jar of salsa
- tomato
- red bell pepper
- cilantro
- avocado
- shredded cheese
- corn
- tortilla chips (optional)
- Combine 1/4 Cup onion with 1 lb ground turkey and brown the meat.
- Start rice (I use a rice cooker and it takes about 20 minutes)
- After meat cooks, drain it and add salsa. Let simmer for 15-20 minutes to soak in all of the flavors.
- While rice is cooking, meat & salsa are simmering, start chopping.
- Chop tomato, avocado, red bell pepper, and wash cilantro. Heat corn thoroughly.
- When your 20 minutes is up, scoop rice onto your plate, followed by meat, and then all of the toppings. I’m sure you can add more, but these are our favorites.
