Before the muffins recipe, my favorite place to find a huge variety of cupcake liners and party goodies like serving trays is Amazon. If I’m out and about, Home Goods takes the cake for glass serving pieces.
I’m posting this picture so you can get a feel for what the dough for these old fashioned donuts looks like. It’s pretty stiff but not too sticky. Definitely more muffin texture than cupcake.
Ingredients:
3 cups flour
3/4 cups sugar + 1/8 cup sugar
1/2 TBSP + 1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1 tsp nutmeg
1/2 tsp cinnamon
1/2 cup butter softened
1 tsp vanilla
2 large eggs
3/4 cup milk
1/4 cup heavy cream
For the topping:
1/2 cup butter
1 cup sugar
1 TBSP cinnamon
{One of my favorite helpers & taste testers}
Preheat your oven to 350 and bake for 25-30 minutes
Line cupcake pan with cupcake liners. In a large bowl, cream butter and sugar. Beat in eggs, one at a time until just mixed in.
In a medium bowl, sift together flour, baking powder, baking soda, salt, nutmeg & cinnamon. In a small bowl, mix vanilla, milk & heavy cream.
With a spoon, mix a bit of the dry mix into the butter mix, then mix a bit of the milk mix into the large bowl. Continue mixing in the remaining dry & wet ingredients into the large bowl. Mix until it is well combined and smooth, but don’t over mix. This batter is one of the more thick batters that I’ve worked with.
Scoop enough batter into each tin keeping the top of the batter is even with the rim of the cup. Bake these old fashioned donut muffins until firm to the touch.
To finish, melt the butter in a small bowl. Combine cinnamon & sugar in another small bowl. When the muffins are cool enough to handle, remove them from the tin. Dip them in the butter & then roll them in the cinnamon sugar. You can roll them all over with the cinnamon sugar or top the muffin with the topping.
